Mini Spinach frittata
Spinach frittata is a delicious and easy brunch recipe with Parmesan cheese that is filling, healthy and perfect for on the go meals too.
  •     4 large eggs
  •     4 large egg whites
  •     1/2 cup 2% milk
  •     4 cups fresh spinach
  •     1/2 cup Parmesan cheese
  •     1/2 teaspoon kosher salt
  •     1/4 teaspoon coarse ground black pepper
  •     1/4 teaspoon paprika

Note: click on times in the instructions to start a kitchen timer while cooking.
  1. Preheat oven to 450 degrees and spray a muffin tin with vegetable oil spray.
  2. Whisk together the eggs, egg whites, milk, spinach, Parmesan cheese, salt, pepper and paprika.
  3. Pour egg mixture into muffin tins 2/3 of the way full.
  4. Bake for 15-18 minutes or until golden brown.
