Instant Pot Faux Cauliflower Mashed Potatoes Recipe of the Week


  • 1 large head cauliflower cored and cut into large chunks
  • 1 cup water
  • 1 trivet or steamer basket
  • 1 Instant Pot
  • 1 tbsp butter optional
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp garlic powder
  • 1 handfull chives optional


  1. Core your cauliflower and cut into large chunks
  2. Add trivet / steamer basket, water, and cauliflower to the Instant Pot
  3. Close lid, set valve to sealing
  4. Cook on Manual high pressure for 3 to 5 minutes, less for a firmer mash
  5. Immediately quick release the pressure and open the lid
  6. Carefully remove the inner pot to drain water from
  7. Return cauliflower to a cleaned and empty inner pot
  8. Add butter and seasonings
  9. Use immersion blender to puree until desired consistency is reached
  10. Stir, serve, and enjoy!
